"Tea" is used to describe a drink that contains leaves from the tea plant "Camellia sinensis". This plant gained popularity in Asia over 3,000 years ago. Black tea, Green Tea, and White tea all originate from this plant. Camellia sinensis naturally contains caffeine at different amounts depending on when it was harvest and the drying process. A herbal infusion is used to describe a mixture of dried herbs and spices that infused with water. This application has been used since the dawn of humankind for medicine, rituals, and drinking water.
All herbs come from plants. Different plants have different temperatures for the ideal steeping and flavor. If your water is too hot, you may scorch your leaves. This will cause the tea to release tannins making it taste bitter. Green tea for example is best when the water is around 160F and steeped for no more than 3 minutes. By having the proper temperature of water, you will have the best tasting and effective tea.
Medicine has originated from plants. Each herbs and plant are made up from organic chemicals. Though these are naturally found please keep in mind this is still chemistry. Everybody is different. If you are planning to use these herbal infusions for your health, consult a doctor or a physician. Please do your own research because some herbs in strong doses can affect prescription drugs.
